Gluten Free Beef Stew — Beef Stew with Tomato Flavor —Beef Stew with fresh thyme — Beef Stew Stove Top — I have a dear and special friend who said he loves beef stew and eats Dinty Moore so I chose to make my version for him. Since Dinty Moore has tomato this is my tomato version.

Use Good Meat
I use Pasture beef from Vermont, I use Haystack Homestead – they ship – support a young family
How I cook
I am not very precise and measuring is not how I cook so hopefully you can make your own whim decisions about my measurements. I make large batches of everything so you may want to cut in half sometimes.
Healthy cooking
I use cast iron – I do not use nonstick, aluminum or many cooking pans especially now that I am detoxing from heavy metals – be aware what you cook with

Ingredients:
Must have in my opinion
• 2 lbs Stew Meat I used Haystack Homestead Meat
• Potatoes 2lbs. (I used small organic gold potatoes Trader Joe’s)
• Garlic Cloves: 2 huge or 4 medium size
• Onion: Half large onion or 1 regular size – pearl onions also or alone
• 4 carrots
• Tomato (I used pasta sauce but you can use paste, tomatoes, sauce any thing you have in hand)
• Beef Broth: Approximately 42 oz – (I used two 17 oz boxes Trader Joe’s)
• Mushrooms
• Flour to thicken I use gluten free from Trader Joe’s (some people use corn starch to thicken)
For Flavor:
• Salt & Pepper (Season each round)
• Bay Leaves: 2-4 bay leaves
• Fresh thyme – lots – I striped many twigs maybe 10 (if not dried)
• Dry red wine 1 1/2 cups
I used Château des Séraphin bought at Trader Joe’s
Alcohol or not:
Alcohol is optional. I separated this into two batches. For my friends I did not use alcohol they had broth and water. For me and my wine loving friend I used a red wine suggested to me for cooking — both yummy. Some people use beer, you could substitute beer I prefer gluten free food.
Optional:
Parsley to garnish
Nice bread to serve with it
The main steps
— Brown Beef
— Deglaze then simmer
— Add Vegetables
— Thicken if needed (I used gluten free flour)
— Serve and Enjoy (garnish with parsley optional)

Step 1 – flouring beef for browning
I cut meat into small bite size pieces, cover with flour and season with salt & pepper
I use gluten free flour from Trader Joes’s

Once coated with flour – heat olive oil until hot – brown about 4 minutes each side

Cook onions and garlic until onions are transparent

Add in thyme and bay leaves – add pearl onions if you choose to use – Put meat back in pot

The key is to simmer low for very long time for best tenderness and taste (1- 1/2 hours)



Add root vegetables – I added Potatoes and Carrots
(You can also add parsnips and/or turnip)
Simmer another hour or until vegetables are soft
Step 7 – Thicken if desired
I used gluten free flour from Trader Joe’s
Put a cup of water in separate sauce pan – add some flour and stir – add to larger pot.
Step 8 – Serve & Enjoy
Garnish with parsley (optional)
Serve with nice bread (optional for gluten free)

Freezes very well

Looks delicious and I absolutely love the way you write. Makes reading a recipe enjoyable. I also liked the pictures.
Reminded me of my Grandmother and the wonderful aromas of her winter kitchen. She put dumplings on top.
