
Very moist stuffing — Made from fresh bread with apples and cranberry
Technically it is “Dressing” if not cooked in bird – I cooke separate —
My dear friend listed his favorite foods as stuffing and scallop potatoes so in the first few weeks I started cooking for him and his sister I made this stuffing.
I use fresh bread you could start with mix or dried store brought product
Ingredients:
BREAD — or store bought cubed bread product – I used 2 baugettes
(I usually 8 _____?? cups of cut bread)
2 eggs
2 cups chicken broth
1 apple I used pink lady organic
1 cup dried cranberries (I like fresh when available)
1 large onion
1 cup celery chopped up
mushrooms — one pack
2-4 garlic cloves
Fresh ginger chopped maybe Tablespoon
Stick butter
Olive Oil optional
To flavor/season:
Salt & Pepper
2-3 Bay leaves
Poultry seasoning (2 teaspoons) or alternative below below
(I have used poultry spice and I have used separate spices)
Parsley – fresh if you have it
Thyme – fresh if you have it
Instead of poultry seasoning: (If you do not have any)
1 Tsp Thyme
1/2 Tsp Sage (Careful as my Mom says too much sage can ruin or over power stuffing)
1 Tsp Marjoram
1/2 Tsp Nutmeg
Pepper to your expectations
Vegetarian/Vegan Options:
Use vegetable stalk
Do not use butter
Do not use egg
Healthier:
Less butter/Less Oil
Try gluten free bread
STEPS:
1) CUT & DRY BREAD
I took 2 baugettes from Trader Joe’s and cut into bite size pieces like size of croutons – I dried out in oven at 200 degrees for about 20-30 minutes or until dry and crunchy


2) MIX EGG, BROTH & SPICES WITH BREAD
In a bowl or the container you dried the bread in add Broth, seasonings, 2 beaten eggs to the bread. Put all in a greased baking pan you plan to cook the stuffing in (coat bottom with butter or olive oil)
3) SAUTE OTHER INGREDIENTS
Put stick of butter in pan and maybe some olive oil first (optional)
Keep on low or medium heat
Add onion, garlic, ginger and celery and cook until softened
Add apple and cranberries and mushrooms and soften a bit then add all to larger bowel/container (where your bread and other ingredients are)



4) BAKE HOUR
Bake an hour or more at 350 degrees – check occasionally and stir
While baking add water, or broth to keep moist
If desired add more butter and liquid when you preheat/re-serve

A baguette like from Trader Joes is 8 cups of bread cut up

ONIONS — 2 large onions – 4 cups
CELERY — 2 cups
GARLIC — 6-8 cloves, 3 Tablespons (cut back if you do not LOVE it : )
GINGER — 2 tablespoons
CRANBERRIES — 1.5 cups
